Beat Rising Summer Heat with This Yummy Chicken Salad Recipe!

Don't forget how delicious homemade chicken salad can be on a hot summer night!

With heat rising in almost every state this week, and as heat advisories are put into effect in state after state, cooking in the kitchen is the last thing any of us want to do. So, making an easy dinner with minimal cooking is a great idea—but what to fix?

An easy-to-fix option is chicken salad! Not only does it make a great salad or sandwich for dinner, leftovers are easy to store and make great snacks and lunches for the rest of the week. And, if you use chicken leftover from another dinner night, or even a rotisserie chicken from your local grocery store, you will not have to do any cooking at all! You will need:

  • Two boneless/skinless chicken breasts, poached (or, as mentioned above, equivalent leftover or rotisserie chicken)
  • ½ small onion, finely minced
  • 1 celery rib, finely minced
  • 2 Tbsp. dill relish
  • ½ tsp. garlic powder
  • ½ tsp. black pepper
  • ¼ tsp. onion powder
  • ¼ tsp. celery seed
  • 2 Tbsp. mayo (or to taste)
  • 1 Tbsp. Dijon mustard (or to taste)


  1. Place chicken in a food processor and finely chop.
  2. Add onion, celery, dill relish, garlic powder, black pepper, onion powder and celery seed. Pulse to mix.
  3. Add mayo and Dijon. Pulse to mix.
  4. Taste and add spices, mayo or Dijon as needed, but don’t go wild! As the flavors set together, you will find that they strengthen, so if you go overboard with the garlic now, you may regret it later! But, do add the amount of mayo/Dijon you need to get the right texture at this time.
  5. If possible, put your chicken salad in the fridge and let set for a few hours, just to let the flavors come together and blend. But, if there is no time, it is good right out of the food processor, too!

Makes about 3 cups of chicken salad, depending on the size of the chicken breasts used.

Serve on a hoagie roll with lettuce and tomatoes with chips, or in a great salad, an you've got a yummy beat-the-heat dinner!
