Creamy Tofu and Berry Popsicles Are a Healthy Way to Beat Summer Heat

Celebrity chefs Debi Mazar and Gabriele Corcos, stars of the Cooking Channel show Extra Virgin, have created Tofu and Berry Popsicles for a refreshing and delicious dessert this summer.

There is nothing better to beat this oppressive summer heat than a popsicle—ice cream trucks are never more popular than when the mercury is on the rise! But, nowadays ice cream and other frozen sweet treats are too often full of high fructose corn syrup, as well as artificial colors and flavors that many parents do not want in their kids’ diets. So, what is a concerned mom or dad to do?

Celebrity chefs Debi Mazar and Gabriele Corcos, stars of the Cooking Channel show Extra Virgin, have created Tofu and Berry Popsicles for a refreshing and delicious dessert this summer. Made with House Foods Tofu, these pops have the added nutrients found in soy and seasonal berries. And, soft tofu gives the pops a creamy, delightful texture. Chefs Mazar and Corcos explain, “Tofu is as versatile as sour cream, heavy cream, mayonnaise, cream cheese or ricotta and has allowed us to bring new life and a healthier component to many of our favorite recipes.” House Foods Tofu is non-GMO verified, certified kosher and gluten-free. It is also vailable in various firmness ranges – from soft to extra firm – along with an organic line of products sold nationwide.

These yummy treats are made with a few easy-to-find ingredients and are simple to make. To give the pops a try, you will need the following:

Ingredients:

  • 1/2 package (7 oz) House Foods Tofu Soft
  • 2 cups strawberries or other berries (whatever is in season in your area), hulled and sliced
  • 1/2 cup super fine sugar
  • 1 ½ teaspoons pure vanilla extract

Directions:

  1. Add the berries to a bowl and toss with the sugar and the vanilla. Let sit out for 20 minutes so they become juicy.
  2. Add fruit mixture to a blender or food processor and puree until smooth. Add the tofu and blend again until incorporated.
  3. Divide the mixture into popsicles molds. Freeze until firm, about 4 hours.

Makes 6 Popsicles (3 ounces each)
